Most of the time walking I carry l ltr of water; 0.5 ltr on a shoulder strap bottle and 0.5 ltr bottle emergency in the pack. I find/ treat water as I go along. I try and get  a pub/cafe meal at night and ask if the water in the toilet taps is potable, inevitably in the bar they will then fill my 2 ltr Platypus which I use to cover a night time drinks and morning breakfast needs till I get to the next water.

Ive started walking the South Downs this year. There is Devils Dkye on the way, which has a pub on the top of the hill (might be happy to get you tap water). It is correct, a lot of villages of "off the downs", and it is a short sharp walk back up. There is also a NT camp ground just down the hill from DD, crossing over the main road (can't remember the name of it off the top of my head)
